Blueberry Chia Topping


Yield: 3 servings


  • 1 cup fresh blueberries (5 ounces)
  • 1 Tablespoon maple syrup or honey
  • 1 teaspoon vanilla extract
  • 1 Tablespoon chia seeds


Combine first three ingredients in a small sauce pan and turn heat to medium-high.
Stir as needed.
Berries will pop and become juicy.
Cook for 8-10 minutes or until liquid is reduced and slightly thickened.
Stir chia seeds into blueberry mixture until there are no chia clumps.
Pour mixture into glass jar or bowl.
Stir after it cools.
Refrigerate at least 2 hours before serving.
